The Filet Mignon and Parmesan Crustini Appetizer

Your guests will be beggingfor more when they taste the juiciness of filet mignon, with the sharp bite of Parmesan, all layered on a crunchy crustini.

The filet mignon crustini takes about twenty minutes to prepare. Once prepared, the appetizer can rest in the fridge and be taken out to reach room temperature 30 minutes before your guests arrive. The appetizer may also be served hot.

Things You’ll Need:

  • French Bread
  • Olive Oil
  • Parmesan
  • Filet Mignon (1 piece)
  • Butter
  • Salt
  • Pepper
  • Frying Pan
  • Meat Thermometer
  • Cutting Board
  • Knife
  • Large Bowl
  • Baking Sheet
  • Oven

Making the Crustini:

  1. Pre-heat your oven to broil.
  2. Slice the French bread into thin rounds about half of an inch.
  3. Place them in your large bowl.
  4. Dump a healthy amount of olive oil on the sliced French bread and toss until the rounds are well coated with olive oil.
  5. Lay the rounds onto your baking sheet in a single layer.
  6. Broil in the oven for two to three minutes. Be sure to keep an eye on them as they will burn quickly at that temperature.

Cooking the Filet Mignon:

  1. Coat the bottom of your frying pan with a small slab of butter. If you’re following a heart healthy diet, substitute non-stick cooking spray.
  2. Turn the burner on to medium heat and let the frying pan warm up.
  3. Season your filet mignon with salt and pepper to taste on both sides of the beef.
  4. Place the filet mignon in the frying pan and allow it to cook for about 5 minutes on each side.
  5. Test the filet mignon with your meat thermometer to ensure that you reach the desired temperature. This appetizer is best served when the filet mignon is medium-rare. That will be 135 degrees F.
  6. Remove the filet mignon from the pan once it has reached that temperature. Allow the meat to rest for five minutes so that it retains it’s juices and finishes the cooking process.

Assembling the Filet Mignon and Parmesan Crustini Appetizer:

  1. Lay out the French bread crustini rounds that you made.
  2. Slice into the filet mignon exposing the beautiful pink color.
  3. Place a thin piece of filet mignon on your crustini.
  4. Cut a think piece of parmesan and place it on top of the filet mignon and voila! Your Filet Mignon and Crustini Appetizer is complete. One loaf of bread and one piece of filet mignon will yield about 30 servings.

Consider Adding Basil:

If you happen to have fresh basil, roll up several leaves and then slices them into several pieces. As you unroll the basil after cutting, you’ll notice you’ve created little sprigs of basil. Place one on top of each crustini as a beautiful garnish that adds a nice bit of flavor.

Melt the Parmesan:

Another alternative is to pop the crustini back into the oven and broil it for 30 seconds. This will soften the parmesan on top of the appetizer. This helps keep it together. However, watch over cooking the filet mignon.
