Meatballs are easy to make & easy to serve. Make & cook these in advance, freeze until needed. On party day, just thaw & serve in a crock pot with tomato sauce. Yum!

Even the best meatball recipe cannot overcome tasteless ground beef. Search for ground beef that has the beefiest taste. Cost is not necessarily a good indicator of flavor. Expensive ground Angus beef can be virtually tasteless. Costco's ground beef is economical, tasty, and comes in large quantities for parties. Ground chuck is tastier than other cuts that are ground. It is well worth the effort to find a reliable source for ground beef. Do not even think of buying the stuff in the tubes that you cannot see through.

The meatball recipes here are not heavily seasoned. They have such a good meaty taste that, like a really good steak, it would be a shame to overpower the flavor. Whatever sauce you serve them with will compliment the meaty taste rather than overpowering it. Too often meatballs taste only like the seasoning in them, without tasting like beef.

Easy Meatball Recipe

  • 1 lb. good ground beef
  • 1/2 lb. sausage
  • 1/2 large onion, very finely diced
  • salt & pepper

  1. Thoroughly combine all of the ingredients, being careful not to compact the meat too much.
  2. Form the mixture into meatballs.
  3. Brown the meatballs in a large skillet in batches, rolling to retain the round shape. Meatballs will not brown properly in an overcrowded pan.
  4. Return all of the meatballs to the pan, cover and cook on low until the meatballs are cooked through, or place in a slow cooker for 3-4 hours.
This is a very simple but good way to make meatballs. The sausage flavors and softens the ground beef at the same time. Make semi-homemade sausage if you can't find sausage to your liking.

Softy Meatball Recipe

  • 1 lb. good ground beef
  • 1/2 pound ground pork (not sausage)
  • 1/2 large onion, very finely diced
  • 1 tsp. vermouth
  • 1tsp. Worcestershire sauce
  • salt & pepper

Follow the steps for the easy meatball recipe above. The ground pork softens the cooked meatballs and helps to hold the meatballs together. The vermouth softens the meat, but too much can turn the meat to mush.

Some Sauce Suggestions to go with Meatballs

  • Tomato sauce is an all time favorite
  • Enchilada sauce
  • White sauce made with sour cream
  • Bernaise sauce
  • Teriyaki sauce
  • Bleu cheese sauce

There are many sauces for dipping meatballs, any good steak sauce will compliment the rich beefy flavor of these meatballs.

While it's easy to buy meatballs, it's not a lot of work to make ones that both have a lot of flavor, and have a softer texture than the ones available commercially. May all your meatballs be tasty and your sauces spectacular.
