A Tender and Tasty Seafood Sandwich

Chunks of fresh lobster meat combined with a creamy sauce nestled in soft rolls. Perfect finger food for bridal showers, summer luncheons, or even a tailgate party!

Lobster rolls have been around for decades, and it's no wonder why. With a simple recipe, easy to find ingredients, and straightforward method, these tasty sandwiches are a party host's dream. While basic lobster rolls are made with little fuss, they can be dressed up for the fanciest of parties.

This basic recipe for lobster rolls would be great for tailgate parties, picnics, outdoor entertaining, casual gatherings, or even book club meetings. Grilling the buttered buns adds authenticity and tons of flavour, but the buns can be left plain if the sandwiches need to be portable.

Lobster Rolls

Ingredients

Directions:

  1. Combine lobster meat and mayonnaise; mix well and set aside.
  2. Open buns and spread butter over both sides. Heat skillet over medium heat. Place open, buttered buns in the skillet and cook until lightly browned; about 2 minutes per side.
  3. Divide lettuce between buns and top with lobster mixture. Serve immediately.

Makes 4 servings.

For something a little fancier, add chopped celery, onion, and herbs to the mayonnaise mixture, and dress the sandwich up with some fresh herbs for garnish. The filled rolls can be sliced widthwise into quarters and held together horizontally with toothpicks, if desired. These dressed up lobster rolls make perfect party fare for bridal or wedding showers, cocktail parties, tea parties, or other special celebrations.

Dressed Up Lobster Rolls

Ingredients:

Directions:

  1. In a medium bowl, mix together the celery, onions, lemon juice, Dijon mustard, salt, black pepper, and dill. Stir well to thoroughly combine.
  2. Add the lobster meat and stir to coat. Refrigerate mixture for at least two hours, or overnight.
  3. Open buns and butter cut sides only.
  4. Heat a skillet over medium-high heat and place buns, buttered side down, in the skillet.
  5. Cook until lightly browned; about two minutes.
  6. Top buns with romaine lettuce, and then with the lobster mixture.
  7. Slice sandwiches into quarters for appetizer servings and garnish with dill or parsley, if using.

Serve immediately.

Makes 4 sandwiches, or 16 appetizers.
