How To Make Crackers From Scratch

Crackers are a staple for party finger foods. Simple and delicious, you'll want to make these crackers for everyday snacks.

Easy. That's a word you need more of when you are trying to entertain. No matter if it's the holidays, a football crowd, or a special occasion.

Crackers are no longer just the plain old saltines you find in a box at the grocery store. They come in a variety of shapes, sizes and flavors. Think of the bragging rights you will earn and all of the praise you will receive from family and friends when you tell them that the tender, flaky and delicious morsels they are eating didn't come from a specialty store; you made them yourself.

The following recipes all bake at the same temperature and for about the same length of time. This means you can bake up several batches of crackers one right after the other with little effort and no worries about changing oven temperature. Just pre-heat oven to 400 and you are ready.

Rye Crackers:

  • Ingredients:
  • 1 1/2c rye flour
  • 1/2 tsp salt
  • 3 tbsp butter
  • 1 1/2 tbsp caraway seed
  • 1/4 to 1/3c water

Mixing instructions:

  1. Using a food processor ; pulse flour, salt and butter together until flour holds together. (or use a pastry cutter)
  2. Remove batter from processor and place it in a mixing bowl
  3. Add the seeds and enough water to incorporate but don't make the batter sticky. You can mix the dough with your hands or a wooden spoon
  4. Lightly flour your workspace (a large cutting board or tabletop will do just fine)
  5. Roll dough out with rolling pin to about 1/4" thickness
  6. Flour a cookie sheet with rye flour or fine cornmeal
  7. Place dough on cookie sheet and score dough with a knife or pizza cutter
  8. Bake about 10 min until they are a golden color

To make the following three cracker recipes, follow the same mixing and baking directions as above

Southwest Style Crackers:

Ingredients:

  • 3/4 c baking flour
  • 1/4 c cornmeal
  • 1/2 tsp salt
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne
  • 1/4 tsp cumin
  • 2 or 3 dashes tabasco sauce
  • 3/4 c grated cheddar cheese
  • 1/3 c butter

Four Cheese Crackers:

Ingredients:

  • 1 1/2 c baking flour
  • 1/2 tsp salt
  • 1/8 tsp cayenne
  • 1/8 tsp garlic powder
  • 1/2 c each shredded romano, swiss, cheddar, and provalone
  • 1/2 c butter

Flax Seed Crackers:

Ingredients:

  • 1 1/2 c graham flour
  • 1/2 tsp salt
  • 2 tbsp ground flax seed
  • 1/3 c flax seed (preferably golden flax)
  • 2 tbsp butter
  • 1/4 to 1/3 c water

Special note for flax seed crackers:

  • After scoring the dough, you can sprinkle the tops lightly with ground or whole flax seed. This will add a little extra texture and nutty flavor to the cracker.
