Feta Cheese Packs a Flavorful Punch in This Easy Appetizer Recipe

Greek-style cheese squares are crispy and rich, and incredibly easy to make. This is simple party food that can be made ahead of time and stored until ready to serve.

Greek Cheese Squares is a wonderful little appetizer recipe to stow away in a recipe box! Crunchy little squares packed with the rich and salty flavor of crumbled feta are a big hit at parties, and can be served in many different ways. Pretty bowls can hold these crackers by themselves, or try matching them up with sliced cheeses and fruit on a platter. They go equally well with crudites and dip.

The secret to the crisp texture of the squares is in the amount of flour used in the dough. There is just enough flour to hold everything together, so the dough itself is very soft and pliable. And it's ridiculously easy to make the squares too! Simply roll out the dough directly in a pan, and cut the squares with a sharp knife before baking.

Another appealing element to this recipe is that it can be made up to one week in advance, and stored in an airtight container until ready to serve. This cuts down on the rush to get appetizers ready for a party. The squares also make a satisfying snack, or a tasty addition to a packed lunch.

Feta cheese is the star of the show here, but other types of Greek cheeses can be substituted instead. Try mild or aged grated Kasseri for something different, or use a combination of favorite cheeses.

Greek Cheese Squares

  • 1/2 cup unsalted butter, softened
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup plus 2 tablespoons whole milk
  • 1 1/2 teaspoons baking powder
  • 1 cup crumbled feta cheese
  • 2 cups flour

Preheat oven to 350 degrees Fahrenheit. Grease a jelly roll pan or large baking sheet and set aside. (Ideally the pan should be 10x10 inches, but use whatever is on hand or a combination of pans.)

In a large bowl, beat the butter with an electric mixer until light and fluffy. Add olive oil and beat on low for two minutes. Add milk, baking powder, and cheese; beat for one minute more. Add half of the flour and beat until smooth.

Add the second cup of flour and mix dough by hand until smooth. Knead dough for three to five minutes.

Spread the soft dough evenly over prepared pan. Dough should be about 1/8-inch thick. Using a sharp knife, cut through the dough to create 1-inch squares.

Bake in the preheated oven for 20-25 minutes, or until tops are golden brown. Remove from the oven and allow to cool completely on wire racks. Store in airtight containers for up to 10 days.

Makes about 100 squares.
